Asian Lettuce Wraps
Quick and easy meals that are delicious are our jam! If you have ever had the Asian Lettuce Wraps from Earl's then you are going to Love this recipe! Such a great meal for those hot summer nights or a busy night these can easily be prepared ahead of time!


Britt's family generally enjoys this meal with chicken by pork chops also taste great in this recipe as another option!
The quantities for this recipe are for approximately 4 people but it can easily be doubled or tripled!!

Ingredients
- 2 chicken breasts or 4 pork centre chops
- 3 carrots
- 2 sticks celery
- 1/2 orange or red pepper
- 1/3 cup chives or green onions
- 2 cups bean sprouts
- 1/2 cup peanuts
- 1 head lettuce
- 1.5 cups teriyaki sauce (for marinading meat and for making stir fry)
- 1/3 cup honey garlic sauce
- 1/4 cup thai chilli sauce
- salt and pepper
- garlic salt
- 3 cups steam fried noodles (Chinese Style)
- 1/2 cup coconut oil
- 1 cup water

Directions
- Start by marinading your meat in teriyaki sauce. Britt like to start marinading the meat either the previous night or the morning of the supper.
- BBQ or pan fry the meat.
- Cut up meat into bite size pieces and set to side.
- Add coconut oil to frying pan on medium heat.
- Add carrots, celery, peppers to the pan and cook vegetables until they start to become tender.
- Add half of the teriyaki and honey garlic sauce to vegetables.
- Add meat and frying pan.
- Add chow mein noodles and add water to pan.
- Add peanuts, chives, salt and pepper and remaining sauces to pan.
- Cook for a few minutes just to take some of the crunch out of the noodles.
- Mix in fresh bean sprouts.
- Wash a head of lettuce.
- Serve on a large cutting board! Take a piece of lettuce and add as much of the asian stir fry mixture to the lettuce.

For this recipe Britt prefers the noodles to stay a bit crunchy... you can cook them to your preference!
Also this recipe is designed to not be to spicy so that the kiddos enjoy it as well! However you could easily increase the amount of thai chilli sauce to give it a bit of a kick!
Another twist you can make to these Asian Lettuce Wraps is to do half peanuts and half cashews! When you are making stir fry you really can't go wrong!
