8 apples medium, peeled, cored, and sliced (about 2 1/2 to 3 pounds) 1 lemon zested and juiced (about 1 teaspoon zest and 2 tablespoons juice) 2 tbsp pure vanilla extract (about 30 milliliters) 1/4 cup maple syrup (4 tablespoons) 1/2 tsp cinnamon ground or 2 cinnamon sticks 1/2 tsp cardamom ground 1 mint leaves fresh, optional 1 tbsp cornstarch as needed if the apples release a lot of liquid (about 8 grams) Crumble Topping 1/2 cup brown sugar packed, (about 320 grams) 1 1/2 cups quick oats (about 135 grams) 1 cup all-purpose flour (about 125 grams) 1/2 tsp ground cinnamon 1/2 tsp ground cardamom 1/2 cup unsalted butter cold and cut into small cubes (1 stick or 113 grams) Optional for Serving Vanilla ice cream or whipped cream
Preheat the oven to 350ºF. Lightly butter a medium baking dish or prepare individual oven-safe ramekins.
In a large mixing bowl, combine the sliced apples with the lemon zest and lemon juice.
Add the pure vanilla extract, maple syrup, cinnamon sticks or ground cinnamon, ground cardamom, and fresh mint leaves if using.
Transfer the apple mixture to a large cast iron pan or skillet over medium heat.
Cook for about 15 minutes, stirring occasionally, until the apples begin to soften and release their juices.
If the apple mixture has a lot of liquid, sprinkle in the cornstarch and stir well. Cook for 1 to 2 minutes, until slightly thickened.
Remove the apple mixture from the heat. Discard the cinnamon sticks and mint leaves if used.
In a medium mixing bowl, combine the brown sugar, quick oats, all-purpose flour, ground cinnamon, and ground cardamom.
Add the cold cubed butter and cut it into the dry ingredients until the mixture is crumbly and forms small clumps.
Spoon the cooked apple mixture into the prepared baking dish.
Sprinkle the crumble topping evenly over the apples.
Bake for about 35 minutes, or until the topping is golden brown and the apple filling is bubbling around the edges.
Let the apple crumble cool for 10 to 15 minutes before serving warm with vanilla ice cream or whipped cream.
Use a mix of apples for the best flavor and texture.
