Ingredients

For The Salad

  • 2 pounds green beans trimmed
  • 1/2 cup almonds toasted and sliced
  • 1/4 cup goat cheese crumbled
  • 1 tsp olive oil extra virgin
  • 2 large shallots  sliced thin
  • 1/2 tsp red pepper flakes
  • 1 tsp garlic powder
  • 1/4 tsp salt kosher
  • 1/4  tsp fresh ground pepper

Optional

  • 1/4 cup parsley fresh and chopped
  • 1/4 cup basil fresh and chopped

Instructions

Preparing the Salad

  • Begin by washing and trimming the ends of 1 pound of fresh green beans.
  • Next, in a large saucepan on medium, heat olive oil, shallots and red pepper flakes. Sautéed until the shallots are a translucent colour.
  • Toast 1/2 cup of sliced almonds in a dry skillet over medium heat until they are golden brown and fragrant. Remove from heat and set aside to cool.
  • Cut 4 ounces of goat cheese into small pieces and set aside.
  • Add green beans and stir in garlic powder, salt and black pepper until desired tenderness is reached, about 5 to 10 minutes. 

Assembling the Salad

  • Transfer the green beans to a large mixing bowl. Toss the beans with goat cheese and sprinkle the toasted almonds over the salad. Serve immediately.
