Saskatoon Berry Pie

This family favorite Saskatoon Berry pie will have everyone drooling! Easy to make and simply delicious, this classic prairie summer pie combines sweet Saskatoon berries with tangy lemons.

Ingredients

  • 4 cups Saskatoon Berries
  • 1/4 cup of water
  • Juice from 1 lemon
  • 3/4 cup white sugar
  • 3 tablespoons all-purpose flour
  • 2 pre-made pie crusts

Instructions

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a pan, simmer berries and 1/4 cup of water for 10 minutes.
  • Squeeze in lemon juice.
  • Combine sugar and flour in a separate bowl and then stir into the berry mixture.
  •  Allow sauce to thicken to desired consistency, then pour the mixture into a pre-prepared pastry-lined pie pan or pastry-lined tart shells.
  • Dot pie or tart shells with dollops of butter. For a pie, place the second crust on top of the pie; seal the edges.
  • Bake for 15 minutes. Then reduce oven temperature to 350 degrees F (175 degrees C) and bake for an additional 35 to 45 minutes, or until golden brown. Let cool before serving

Notes

Feel free to substitute different berries for this recipe. Haskap berries are a delicious alternative!
